Oven Baked Doughnuts

OK so I can’t take credit for this one it came from a magazine (a supermarket one I think, but I do it from memory now), but had to share as it’s fab!

Ingredients:

  • 85ml Sunflower/Vegetable Oil
  • 1 Egg
  • 125ml Milk
  • 1/4 tsp Vanilla Extract (if you have it)
  • 200g/ 8oz Self-Raising Flour
  • 100g/4oz Caster Sugar
  • 125g/5oz Seedless Jam
  • 75g/3oz Butter (preferably unsalted and extra for greasing)
  • 100g Granulated Sugar

 

Instructions:

  • Beat together Egg, Milk, Oil and Vanilla in a large bowl
  • Sift in Flour and stir in the Caster Sugar until just mixed (lumps better than over working it at this point)
  • DO NOT PANIC! It will look like the flour glue you made as a kid, or really odd cake batter, at this point (trust me I freaked the first time, but they worked out) Spoon half the mixture into a well-greased 12-hole muffin tin
  • Add a teaspoon of jam to the centre of each ‘blob’ and then cover with the remaining mix (make sure you can’t see the jam or it will burn and that tastes icky)
  • Bake at 180C/GM5 for about 25mins until golden and springy to the touch
  • Melt butter in a bowl (in microwave or over simmering water) and put the Granulated Sugar in another bowl. As soon as the doughnuts are out, roll them in melted butter and then in sugar to coat, leave to cool on a rack. Mmmm doughnuts… 🙂

 

Tips and Variations:

  • MY BEST TIP: use less than half the batter to start with, (like just enough so you can’t see the base of muffin tin) then you have more to make sure jam is well coated.
  • This is the one time I will insist on really greasing the tin, if they stick you try hoisting them out with a knife, but you rip them open and leave jam in a pool in the muffin tray (totally didn’t do that the second time I made these….) and don’t forget them as then top becomes much firmer than bit in the tin (so didn’t do this either) but can be rescued with extra melted butter and sugar, so no sweat.
  • Change the jam for any flavour (I like raspberry best), chocolate spread or lemon curd…or make several different varieties 🙂
  • Can swap Sugar for Granulated Sweetener if you prefer (but check the package as you may need less of it)
  • Make it fun for kids to help: Add food colour to the batter and use coloured sugar or icing to coat the doughnuts.
