Let’s have a quick chat about Tortillas: You may call them wraps and only eat one kind (white, seeded, wholemeal or corn), so all of these recipes can work with every type. If you’re asking, I’ll have a wholemeal one please 😉

  1. Basic wraps: Basically spoon anything you’d put in a sandwich into the centre of a tortilla and fold the bottom edge up and then roll from one side to the other to form sausage shape. Enjoy.
  2. Burritos: (Basically warm version of the above.) Warm the tortilla for 20-30 seconds in microwave. My favourite filling is a couple of tablespoons of hot brown rice, grilled veggies (peppers, onions and corn for me) some salsa and grated cheese….my mouth’s watering now, may have to make those for tea!
  3. Tortilla chips: (Crispy for dipping) Cut tortilla into 8 wedge shapes. Season and place on a non-stick baking sheet (oil makes them soggy, so if your tray isn’t non-stick, use baking parchment.) Bake in the middle of preheated oven at 180C/GM4 for 5-6 minutes. Turn them, season the other side and bake another 6-9 minutes until just starting to colour. Allow to cool and crisp up.
  4. Tostadas: Prepare the filling and then use a griddle or frying pan and a little oil (or even a barbeque) to lightly toast the tortilla (only about a minute on each side) until they are golden and a bit crispy in some areas. Place tortilla on a warm plate and pile on the filling. My favourite filling is:
  • 1/2 Ripe avocado, diced
  • 1/2 cup black beans (cooked or tinned) rinsed and drained
  • 1/2 red pepper, seedless and diced
  • 3-4 tbsp sweetcorn kernels
  • 3-4 tbsp grated carrot
  • 2 boiled eggs, chopped
  • 1/2 cup grated cheese
  • Sauce or salsa of your choice (mayonnaise and ketchup?)

Mix all ingredients together, except the sauce and heap onto the tortillas… serve with salad greens if you wish. The mix above will make two large tostadas or 4 small.
