Daniel Plan Update

Thought I’d share my progress and yesterday’s lunch recipe with y’all 🙂

I lost 2lbs this week, which is a good start on a new journey (especially considering I haven’t been exactly saintly about the ‘no refined sugar’ thing).

Ages ago I shared these tortilla recipes and I mentioned tostadas but don’t think I really did them justice: We had them for lunch yesterday and kept saying how we loved them and that we don’t have them often enough…so I thought if it’s that good then you lovely peeps should see for yourselves:


The beauty of tostadas is you can put what you want on them, but for the 2 of us I used:

  • 2 hard-boiled eggs chopped
  • 1 carrot, grated
  • 1 apple, grated (or chopped if you prefer)
  • 2tbsps sweetcorn
  • 3tbsps black beans (drained and rinsed)
  • 1/4 red bell pepper, diced
  • handful of baby spinach, chopped
  • 1/2 avocado, diced
  • 3oz/80g grated cheese
  • 2 wholemeal flour tortillas
  • (light olive) oil for cooking


No real instructions other than; 1) prepare toppings first, then 2) heat tortillas in lightly oiled pan or griddle (about 1 minute each side until dark, crispy bubbles form) and 3) throw the stuff on top!

(I like to mix mine, but you could make it like a salad bar so people can choose toppings.)

Tip: Eat it quickly, they are much better when warm ❤ *drool*
